Gotta take off my stock shocks so I can get the swing arm to drop down enough to remove the lower bolt on my passenger pegs. Has anyone unbolted/taken off their shocks? Don't think it would be too tough, but don't want to run into any probs if I can avoid it.

Go to http://www.bareasschoppers.com/
Than go to the Kuryakyn Rear Turn Signals under Tech Write-ups and follow the first procedures there to remove rear shocks.
I just used my bike lift to take some of the weight off the wheels. I did not lift the wheels off the ground. Just enough to relieve the tension on the shock bolts.

Piece of cake. Like Lax said. Your going to take off your rear pegs all together? Well I guess so, no Passenger seat....

Mark:
Before you go to all that work (piece of cake  , moving the swing arm so the rear peg bolts can be accessed?), you might want to read Woot's post on the Tech Board. He said, he did, what your doing and the swingarm didn't move enough to clear the bolt. Actually the bolt ended up denting his swing arm. You might want to PM him or call him before wrenching away. His conclusion, is what your contemplating may be a waste of time.
Go to the second post on this string written by Bareass http://www.vtxoa.com/forums/viewtopic.p ... ck+removal (http://www.vtxoa.com/forums/viewtopic.php?t=56042&highlight=rear+wheel+alignment+rear+shock+removal) . He explains in great detail, with pictures included what you need to do when working on (in this case removal) of the swingarm.
Good luck.
PS: The C model, just has a pin with a little snap thingy on the end holding the rear pegs on. I think it might take a minute to take them off. :)
