There are places to rent boats (canoes) and you can spend the day on the river it self ( you park at the place and they bring you to the river and bring you back afterwards http://www.adventuresport.com
you can ride 447n to 507 n and go along Lake Wallenpaupack. From there take 6 E into Milford and get some decent eats in town I like the Tom Quick Inn on Broad St. Theres a bit of historical stuff in and about there to see.
thats all I can think of for now unless we throw together an impromptu meet up in the Pocono's that weekend.
you can go to Beltsville state park or even go into the town of Jim Thorpe which would be kind of close by and take the old railroad tour and every home in Jim thorpe is a candle shop or some sort of witchery store, lol.
the american candle shop is out there , the snake museum is out there, although its not very good......., theres lots to do out that way.
